Giving Tuesday

Thanksgiving is over and not only am I thankful for the amount of food that was on the table but I am also thankful to have leftovers. Black Friday has come and gone. In Canada we celebrate Dec. 26th, Boxing Day, which is the biggest shopping day fo the year. However, I don’t think it is anywhere near as outrageous as Black friday in the States. I cannot believe that some stores open at midnight and that people actually rush to them. Is acquiring this much “stuff” necessary? I will not lie. I did go shopping on Black Friday. Wes and I actually worked for the first half of the morning. We went to Firehouse for lunch and then decided we would hit up two stores, Barnes and Noble and Rack Room Shoes. We both love BN and I had a coupon for the shoe store so we figured we would see what they had. We spent an hour in BN, which is always easy to do. I love that store. However, we walked out with nothing in hand. At Rack Room Shoes we both got a pair of shoes and used the coupon. Wes’s shoes were 50% off. Score! Then, we headed home. While I enjoyed the two stores we went to I still don’t understand how people shop from dusk until dawn on Black Friday. I recently read an article that stated people will spend an average of $350-$400 shopping on Black Friday. On what?! Do you realize you and your spouse/ partner could enjoy a fabulous cruise for that amount of money?

Now, enough venting. I am writing this post not to vent about Black Friday, but to inform you of a delightful new idea called Giving Tuesday. I just learned about this event this morning. It is a perfect end to this fall holiday. Non-profits across the country are encouraging people to give to a charity of their choice on Tuesday, November 27th, 2012. Click here to go to the website for Giving Tuesday. I am not sure about other states but in Northeast Florida you can go to WeGive.org to find a charity you would like to donate to. There are tons to choose from! You can search by organization or cause.

What’s Going On Upstairs?

I had mentioned to a friend that I was absent-minded, forgetful, etc. She immediately said, “It’s pregnancy brain.” What? I shrugged it off because I thought it was more of a convenient excuse and a term that people used to not make a pregnant woman feel stupid. I was wrong!

Recently, I went to Target in the afternoon to make a few copies of our ultrasound photos for a family member. I used the machine that prints the copies right away. When you’re ready to print the machine makes you enter your first and last name as well as your phone number. I was confused as to why I had to enter my phone number seeing as I was printing the photos right then and there. I shrugged it off though. Later in the evening I received a phone call and message from the man who was behind the photo center counter about one of my photos. Apparently I left one of our precious ultrasound photos under the scanner! This was where my hand smacked my head and I start shaking my head in disbelief that I am so crazy. This man was so kind. He kept the picture safe and I was able to pick it up the following day. Whew! I didn’t even realize it was missing. It was this experience that made me want to learn more about this supposed pregnancy brain.

An interesting WebMD article discusses whether or not pregnancy brain is real, reasons for pregnancy brain, and what pregnancy brain feels like. The article was informative and from what I gather pregnancy brain is very real. Lately, I feel like I would forget my own head if it wasn’t attached to my body. I have walked into my kitchen numerous times and stood there dumbfounded because I couldn’t remember why I walked in there. Luckily, kids go back to school in a week and then I will have plenty of people to help me, remind me, and hopefully forgive me.

While researching I found out that there is also something called daddy brain. Oh yes! This is a thing. Check out the USA Today article, Dad’s Hormones Change Too During Pregnancy. This article is fascinating. The male brain goes through a lot of changes.

I’m Pregnant and I Know It

Obviously when you’re pregnant you don’t feel like the sexiest human being alive. All your clothes don’t fit. Going to the mall is depressing. You feel bloated and icky. You really have to make it a point to look in he mirror and tell yourself you are gorgeous. Wes is very good at telling me I look beautiful in my boxers and old t-shirt when my hair is looking like Medusa’s. Gotta love him.

A year ago LMFAO came out with a song titled, Sexy and I Know It. Earlier this year a mom to be and her hubby created a parody of this song called Pregnant and I Know It. When I saw this it made me smile, and laugh my butt off. To all you moms to be, you are gorgeous! ENJOY =)

Lesson Learned: Pregnancy is beautiful!





Surprise!

I saw the tiny + sign. I took a deep breath as my heart was pounding. That tiny little symbol changed my life. I must admit I was scared. There was lots to do and think about. There still is, but it is all less scary and now extremely exciting. My first step was to see my doctor. Check! Now it was official. I left the doctor’s office with a bag full of paperwork and magazines. It was all overwhelming to say the least. So here we go!

A week later Wes and I went to our first doctor’s appointment. I had only met with the nurse before. So we had our first exam, ultrasound, and family history discussion. Whew! Wes downloaded a Sprout pregnancy app to the i-Pad and brought it with him to the appt. so he could take notes as well as ask some questions we had. He is such an organized daddy. Our first ultrasound was amazing! Even though I weighed 120 lbs. and had no bump there was a little person living inside me. We could see the heartbeat of our little peanut and it was glowing on the screen like a star. The doctor declared that I was 8 weeks and due December 14th. Whew! We have time to plan.

Now the life changes started. Decisions needed to be made. First off, I had to stop all vitamins and supplements I was taking and start taking prenatal vitamins. As per doc’s recommendation I am taking Centrum prenatal vitamins. I was in my third semester of graduate school with Drexel. I could not continue my studies because with the first trimester symptoms and working full time I couldn’t manage the work load. I withdrew. This doesn’t mean I don’t still want my Master’s. I just need to take a break. Additionally, due to my medical history the doctor advised me not to run. This was quite hard to accept. I had worked so hard to build strength and endurance. I ran my last race in April, the Guns n’ Hoses 5K, where I achieved my fastest time yet, 27 minutes. So just like that I stopped running. This was for a good cause of course. I have gone walking on my running route, which I can tell you is hard mentally to do because I have so many urges to sprint. I have also been lifting some five pound weights to stay in shape. I stopped running but not exercising. Anyway, my mother has purchased us a jogging stroller with a car seat (travel system), which I am beyond excited about and can’t wait to utilize in 2013. I would like to set a goal to complete a 5k six months after I give birth.

So here I am. We have reached 21 weeks! I cannot believe I am more than halfway. Lots has happened.

First of all, I downloaded the babycenter app to my phone. It is really cool! Each week I get an update of what’s going on with the baby’s development. Each day I get a pregnancy health tip. I bought the What to Expect When Expecting book and two friends have given me the Mayo book as well as a Your Pregnancy week by week. I have found the What to Expect When Expecting book to be the least useful. In fact I haven’t looked at it in a long time. The other two books I read weekly. Wes and I are constantly amazed when reading about all the intricate changes that occur each week. Wes also downloaded a baby names app. Picking a name has proven to be a hard process. We have not settled on one yet but have some top contenders. One of the funniest names we saw on the app was Hamza. Wes teased me about naming our baby Hamza for a while. Somehow Hamza has turned into a nickname for the baby. It is such a weird name! Anyway Wes decided that we needed to organize our top names somehow so he created a magnificent Excel spreadsheet. He typed in our top first and middle names and then created a formula that   put each first name with each middle name. Finally, he created a rating column so we could rate the combinations. Yes, he is amazing like that!

We heard the baby’s heartbeat for the first time on June 8th. It was incredible! It was beating so fast, like a runner in a marathon. Go baby! July 13th was our second ultrasound as well as the day we got to find out the sex of the baby. We had been waiting impatiently for this day. It felt like it took forever to come. Wes was holding my hand as we got to see the baby on a big t.v. screen. When the nurse told us we were having a boy both of us had tears in our eyes. It didn’t matter if it was a boy or girl. Somehow though that day the baby just became more of a person. He is our little person. That day we received 10 photos of our little guy. Some were even 3D which blew our minds. On August 3rd we went to the doctor for a checkup and heard the heartbeat again. The doctor said we have a very active boy, which is a good thing. She had to keep moving the device because he kept moving.

So now we buy blue! Wes had already decided that he wanted an airplane nursery. We found a complete baby aviator nursery linen set at a nearby thrift store. Score! Other than that friends have generously given us heaps of baby stuff. Additionally, I obviously no longer fit into my size 2 clothes. I bought the BeBand from Target and it has proven to be awesome. I can still wear my size 2 bottoms without buttoning them. The BeBand fits over top and holds up my pants and shorts. I have also been shopping at Round Robin and other thrift stores for maternity clothing. I have found some cute things. I refuse to spend a ton of money on a temporary wardrobe.

UPDATE:

I’m excited about: On August 6th we felt the baby kick for the first time! I have felt him moving for a few weeks now but last night was the first time we felt him kicking. It felt weird and beyond amazing.

I’m nervous about: our next doctor’s appt. and going back to work next week. Doctors always make me nervous. Teaching while pregnant makes me nervous because it is a demanding  job.

How do I feel? I feel great! I get tired easily but that is normal. I have not vomited once! Whew! However, I can tell you I have learned a lot about round ligament pain, but that topic is for another post.

Weight: 127 lbs I have gained 7 lbs since I found out I was pregnant.

Eating: I love food! Most of all I love peanut butter and frozen yogurt but not combined. I recently treated myself to some almond butter too. Yum! I haven’t changed the portions of my meals but have been snacking a lot. Wes makes us an amazing breakfast almost every morning like he has always done with egg whites, toast, fruit, and turkeysausage. For a snack I usually have a banana and peanut butter or nuts. For lunch I usually have a sandwich and some fruit. My afternoon snack is usually a yogurt or a granola bar. I just bought Kashi’s new peanut butter dark chocolate bars. Oh my! For dinner I have chicken, salmon, or pork with veggies and/ or whole grain pasta or rice. I have also fallen in love with sweet potatoes. After dinner is where the low fat frozen yogurt comes in. Yum! Oh and I drink heaps and heaps of water. No wine for me for a while. I have never liked juice or soda (which is bad to drink anyway) so water it is.

Exercise: I have been doing a lot of walking and stretching. I have also been doing tricep and bicep exercises with some 5 lb. weights. Usually this ends up being a 30 minute workout.

Baby Center Week 21: Your baby now weighs about three-quarters of a pound and is approximately 10 1/2 inches long — the length of a carrot. You may soon feel like she’s practicing martial arts as her initial fluttering movements turn into full-fledged kicks and nudges. You may also discover a pattern to her activity as you get to know her better. In other developments, your baby’s eyebrows and lids are present now, and if you’re having a girl, her vagina has begun to form as well.

What do I have to say to the baby? Everyone is so excited to meet you! Your daddy is so organized that he is planning how to finance your college career. You inspired me to paint a beautiful pregnancy silhouette, which we are going to hang in your room. xo

Margarita Cake

Happy Easter, Passover, and spring to all. My father and step mum invited Wes and I over for Easter dinner. We were in charge of dessert. This means research was in order. I wanted to make something with fruit as it is spring. Wes made us both margaritas a week or so ago so I thought why can’t we make a margarita dessert? I Googled so many things. Finally, I used about three different recipes to make my own Maragrita Cake. If you are looking for an irresistible and easy spring/ summer dessert this is it!

Ingredients:

1 can (ready to use)white buttercream frosting (I used Betty Crocker)

1 package of strawberry cake mix (I used Duncan Hines because it was BOGO! More on that later.)

1 1/4 cup non-alcoholic, margarita mix

1 tablespoon lime zest

1/4 cup of tequila

2 tablespoons triple sec liqueur

Fresh Strawberries

Instructions:

Preheat oven 350 degrees. Spray two 8 inch pans with vegetable pan spray

Cake:

Follow cake mix package instructions for making cake in two 8 inch pans, but replace the water called for with margarita mix. I would also replace the oil for apple sauce. See low fat instructions on the box. Add lime zest, tequila, and triple sec. Divide batter into two pans. Bake according to cake mix package directions. Cool on rack 10 minutes; remove from pans to cool. Frost when cake is completely cool.

Frosting:

Thin spread white frosting to spread consistency. Spread on bottom layer. Top with remaining layer. Finish frosting top and sides of cake. Garnish with lime twists and strawberries. After you frost the cake slice strawberries to put on top. Bam! Eat it and enjoy.

  

The cake turned out amazing and it was so easy!

        My dad and Roxanne had seconds! I on the other hand did not have seconds because I was too full from the scrumptious lamb that Roxanne made. Skeletor had his first lamb bone thanks to Roxanne. He is loving it! We are freezing it and giving it to him for only about 20 min. at a time with supervision. Turns out the boy likes lamb! As I mentioned above the cake mix was BOGO (buy one get one) so for free I got Duncan Hines’s Pineapple Supreme cake mix. I am still debating how to use it. I bought pineapple at the grocer this weekend. I am thinking I could put Malibu coconut rum in with the mix. Please let me know your ideas!

Lesson Learned: Spring/ summer desserts are fun and rewarding to create. They just require a little research. Margarita cake is super easy!

Table For Two

It has been eons since my last blog post. University has been taking up a lot of my brain power and time. Recently, I finished my finals for my second semester of classes, which was brutal to say the least. Tomorrow starts a new spring quarter with Drexel. Whew!

The in between times have been splendid. Wes and I are a couple of foodies. We love to cook and experiment with new things. In the past month we have discovered how amazing kale and gnocchi are to devour. I am sure we are last on the planet to discover how amazing these two foods are but better late than never. Plus, I learned a little about farming.

First, I randomly bought Gia Russa gnocchi at Publix because while shopping we were handed a dinner recipe that included gnocchi, spinach, and salmon. Wes and I are salmon feins! Plus, the recipe sounded fancy but seemed easy to cook. Click here to check it out: Salmon Puttanesca Over Spinach With Buttered Gnocchi. It turned out so yummy and was easy to cook.

Then, I discovered kale a few weeks ago at a hydroponic farm in St. Augustine. A friend of mine invited me and I was so intrigued I had to go. Of course I knew next to nothing about hydroponics. It was so cool! Check it out by clicking here. I picked strawberries, kale, and cilantro. Additionally, I bought green peppers, squash, and some kind of Chilean red pepper. Everything was delicious. Plus, they had book of printed recipes that you could take home! Oh my! I took a chance with the kale. The only reason I say that is because I have never eaten it or cooked it. I came home and started to devour strawberries. The following day I made kale chips. OMG! I love my greens and these babies are yummy. All it takes is a little salt, olive oil, and 10 min. in a 350 degree oven, and ta da!

Today, Wes and I were in World Market and pumpkin gnocchi by Gia Russa. I know it sounds weird, but we had to try it. Surprinsly, it didn’t taste like pumpkin. I am not too sure how to describe it. It was a little sweet. I mixed it with some Bertolli vodka sauce and it tasted good. Additionally, we had broccoli and garlic Shake N’ Bake pork chops.

The other night I used the vodka sauce to make a chicken pasta dish. Tonight we used the rest of the jar. However, I got to thinking about the sauce. Pasta sauce comes in these large jars with a minimum of 5 servings. What about a jar for 2 people? Don’t get me wrong. I love Italian food, but I also hate wasting food and sometimes it’s annoying having to “figure out” how to use the rest of my sauce, especially if we don’t feel like eating it. After some research I found only one brand with a smaller jar (345 g) of sauce. Bertolli apparently has a gourmet pasta sauce line but it is on an Australian web page and you can’t purchase it. ROAR! Other than that I can’t seem to find a smaller size jar of sauce. Please do let me know if you know of a good brand that sells a small jar of sauce.

Cookbook Idea! 

Recently, I came up with an idea for a couple’s cookbook. How about a cookbook for active couples? The book would contain recipes specifically tailored for two. Additionally, every other page would contain a picture of an activity for couples. For example, on the left side of a page show a picture and info about a cool kayaking spot and on the right side show a recipe for some yummy wraps that the couple can take with them. Wes and I have an active lifestyle and try to eat healthy as well. Sometimes this requires some serious planning. When I have time maybe I will try to make the book idea a reality. Ha! Time? What’s that?

LESSONS LEARNED: Gnocchi and kale are easy to cook and beyond tasty. I love pasta sauce but wish there was a jar containing only 2 servings instead of 5.  





Breaking It Up

My second semester with Drexel has commenced. The stress is mounting! I want my master’s degree so bad I can taste it. I am taking two classes, Education and National Development and Culture, Society, and Education in the Comparative Perspective. Whew! Wes has set me up with a spiffy work station. Hello Mac! Last semester he bought me a fancy new office chair. I am good to go.

I tend to spend anywhere from three to four hours ata time studying. I don’t know about you but as a teacher I am not used to sitting for this length of time. It has been made very clear that I need to take breaks. What should you do on a break so that you feel re-energized to get back to work? Eat! Well, at list this has been my solution. It is working like a charm.

What are your favorite snacks? Personally, I am obsessed with Emerald nuts. Last week blueberries were on sale. We just so happened to have some vanilla yogurt in the freezer. Plus, I have Hershey’s light chocolate syrup in the fridge. Have you guessed my snack yet? Oh my!

   

I am a chocoholic. Always have been and always will be. Well I bought a bag of bite size Dove dark chocolates. They have inspirational little messages on the inside of the wrappers. It’s like a chocolate fortune! It’s great when I am tired and have a lack of motivation. I usually will have just one as a snack. Even though it takes so much courage not to eat like ten at a time.

  

Blueberries were still on sale this weekend. Woot! I decided I have to bake something. I made low fat blueberry muffins. These will make an exceptional snack, especially with a bit of apple butter spread over top. Of course the apple butter no longer makes them low fat.

1 1/4 cup of wheat flour

1 1/4 cup of oats

1 tsp baking powder

1 tsp baking soda

1/4 tsp of salt

1/2 tsp of cinnamon

1/2 tsp of nutmeg

1 cup of applesauce

1/2 cup of brown sugar

2 tsp canola oil

1 large egg

3/4 cup of blueberries

1/2 cup of  crushed walnuts

6 tablespoons of plain non-fat yogurt

2 tablespoons of 2% milk

Directions:

Preheat oven to 375 degrees. Insert muffin cups into muffin baking tray. Spray muffin cups with PAM. In a large bowl combine flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg. Next, in a medium bowl combine applesauce, egg, milk, yogurt, sugar, and oil. Make a well in the dry ingredients and add applesauce mixture. Fold in blueberries and nuts. Fill muffin cups 2/3 full. Bake 16-18 minutes. Enjoy!

  

LESSON LEARNED: Snacks are a necessity for any hard worker. Don’t forget to take a break.
